Meal Plan Monday
Here's my meal plan for the week. I don't usually follow this exactly, but it gives me a good plan to go on.
MONDAY - create something with chicken and cream of mushroom soup, sweet corn from the farm market, mashed butternut squash (with a little butter and brown sugar), tossed salad with homemade blue cheese dressing (1/4 c. mayo, 1/4 c. sour cream, 1 T. red-wine vinegar, 1/2 c. crumbled blue cheese, salt and pepper).
TUESDAY - Taco Salad with lettuce, green onion and tomato from the garden and jalapeno havarti cheese
WEDNESDAY - Simply Great Chicken, boiled Yukon Gold potatoes from the farm market, other veggies from my fridge that need to be used. I'll boil the chicken carcass to make chicken broth for Friday's soup.
THURSDAY - Leftovers. The above chicken recipe makes quite a lot.
FRIDAY - Wild Rice Soup, homemade corn bread
LUNCHES/SNACKS - Apple snack cake, smoothies, homemade mac & cheese, pesto pizza with homemade crust, ham and cream cheese roll-ups, bagels with cream cheese.
